Sometimes getting lunch together for my husband to take with him to work can be a challenge.

But over the weekend I tried something different...I prepared an Easy Make and Take Lunch Recipe of grilled chicken with an assortment of vegetables.

I grilled a few boneless, skinless chicken breasts along with zucchini, peppers and onions.  I also steamed broccoli...which we love.  I even prepared a salad.  I divided everything up in these really great containers and lunch for the coming week was ready.

And to go with my husband's lunch, we're trying these new Minute® Ready to Serve products: Minute Ready to Serve Organics, White and Red Quinoa, and gluten-free Multi-Grain Medley. They're the perfect go-to pantry staple that can easily be taken with my husband to work in the morning.

Organic Brown Rice has a nutty flavor and subtle, chewy texture. It’s 100 percent whole grain, gluten free and a good source of fiber.
Organic White Rice is long grain white rice, and is also gluten free and can be used as a simple side dish or as an ingredient in a salad or soup.
Organic Red Quinoa & Brown Rice with Garlic is a delicious blend of organic red quinoa and organic brown rice combined with just the right touch of garlic and onion. It is 100 percent whole grain, a good source of fiber and gluten free.

Make sure you print out the recipe for this easy honey dijon marinade at the bottom of the post.  It's so delicious!  I like to double the recipe and store in a mason jar in the refrigerator.

Grilled zucchini is brushed lightly with olive oil and cooked for a few minutes on each side until fork tender.  Season with salt and pepper after it has cooked.
