Corn Fiesta Salad is perfect for summer BBQs and picnics with family and friends. I've made this recipe a few times and I always enjoy it and so does my family. It's fresh, delicious and easy.
AND it looks so pretty and summery! Fresh corn is available right now...so why not pick up a few ears of corn and put this quick salad together. I know you'll enjoy it.
I shared this recipe last summer as part of a July 4th roundup, so I think the recipe became lost with all the other menu ideas. It deserves to have a post all on its own!
Feel free to add chick peas or black eyed peas, whatever you have on hand works perfect for this salad. That's the beauty of this recipe, there is no right or wrong way to prepare!
- Two ears of fresh corn; removed from the cob
- One can red kidney beans or black beans; rinsed and drained
- One can diced tomatoes; drained
- One cucumber; chopped
- 1/3 cup red onion; chopped
- 1 TBS. chopped parsley
- 1 TBS. chopped basil
- Italian Salad Dressing
Combine everything together in a bowl and add the salad dressing.
I used Good Seasons Italian Dressing, but your favorite would work nicely also.
Cover and refrigerator for one hour before serving.
