Ricotta Stuffed Tomatoes is a great side dish and makes any meal delicious with very little work!
10 plum tomatoes
1 small container of ricotta cheese
1 sleeve of Ritz crackers
garlic, parsley, red pepper flakes
Cut the tomatoes in half and remove seeds.
Sprinkle each half with salt and place them on paper towels upside down so they will drain.
Combine the ricotta cheese with the garlic, parsley,
red pepper flakes, whatever seasonings YOUR family enjoys.
Fill each tomato half.
Take the sleeve of Ritz crackers and crush them and place them in a shallow dish.
Place each filled tomato half into crackers, cheese side down.
You want the cracker crumbs to "stick" to the tomatoes.
Place the tomatoes in a baking dish and drizzle each tomato with olive oil
just before baking at 400 for about 20 minutes
or until tomatoes are bubbly and your kitchen smells like heaven...
I've made these a few times for a large crowd and just for our family.
You can prepare them earlier in the day and refrigerate until you're ready to bake them.
Drizzle them with the olive oil just before baking.
An easy and delicious side dish!
