Recipe: Roasted Asparagus with Parmesan Cheese

Today I'm sharing with you one of the easiest recipes that will make a huge presentation for any meal you are serving for your family or for guests.

Roasted Asparagus with Parmesan Cheese is so easy to make!  My husband and I love this recipe and enjoy asparagus often as a side dish to our meal.  We love it with grilled chicken or grilled steak.  
Roasting asparagus changes the flavor of asparagus.  It actually takes out some of the natural bitterness when you cook asparagus.  For best results you want to use thick stalks when roasting.

I used to drizzle the asparagus with oil but now I use the Kitchen Spritz tool from Pampered Chef.  I use this to spritz or spray all my vegetables before roasting.  It works great and is a healthy way to add a light coat of oil to vegetables, salads, meats and will prevent food from sticking to your pans.

Easy Directions on How to Roast Asparagus

  • How to Trim Asparagus

Trim the asparagus by cutting off the bottom thick pieces.  I like to pick up one stalk and holding it between two hands slightly bend it and then allow it to break naturally.  Then I use that one stalk as my guide to cutting the rest of the asparagus.

Place the asparagus on a baking sheet that is lined with parchment paper.

Spritz the asparagus with oil using the Pampered Chef Kitchen Spritz tool.

Don't forget the salt and pepper!  I like to use sea salt or kosher salt when roasting vegetables

  • How Long to Bake Asparagus

Bake in a preheated oven for 15 to 20 minutes or until the stalks or fork tender.

They're delicious just like this but you can also add a sprinkle of freshly grated Parmesan Cheese.

Roasted Asparagus

INGREDIENTS:

  • 1 bunch of asparagus; thick spears are better for roasting.
  • 3 TBS. oil - see note
  • salt and pepper; to taste
  • Parmesan Cheese

INSTRUCTIONS:

  1. Preheat your oven to 400 degrees.
  2. Rinse and cut off the thick ends of the asparagus.
  3. Lay the asparagus in a row on a sheet pan that is covered with parchment paper.
  4. Drizzle with oil or using the Pampered Chef Kitchen Spritz, gently spritz the asparagus with oil.
  5. Season with salt and pepper; the more pepper the better!
  6. Bake in the oven for 15 to 20 minutes or until the stalks are tender and browned.
  7. Sprinkle with freshly grated Parmesan cheese before serving.
Note:
  1. You can drizzle oil on top of the asparagus or you can use the Kitchen Spritz tool from Pampered Chef that I feature in this blog post. I like to use the Kitchen Spritz because it is a healthy way to add a light coat of oil to vegetables without all the calories.
