Prepare these Scrambled Egg Muffins a few days ahead of time
These Scrambled Egg Breakfast Muffins are easy and fun to make! Your family will love these egg muffins for breakfast when mornings are busy and you don't think you have enough time for a good breakfast. These egg muffins have bacon and cheddar cheese but can easily be made with breakfast sausage.

Make them for a quick, on-the-go breakfast the whole family will love. You can prepare these ahead of time and freeze them. Then on busy mornings, take a few out of the freezer to reheat and eat as you go! You can try different combinations of ingredients that your family will love. I love cheddar cheese and bacon and my hubby loves his with breakfast sausage.
Ready for the oven.
They really are easy and delicious. A great way to enjoy breakfast when you're in a hurry.
To freeze the muffins, place them on a baking tray and place in the freezer for about 30 minutes or until they are frozen. Remove from the tray and place in a freezer safe bag or container. I like to write the date on the bag as well.
Scrambled Egg Breakfast Muffins
- 6 eggs
- 1/4 cup milk
- 3 strips of bacon; cooked and crumbled
- 1/2 cup cheddar cheese; shredded
- 1 TBS. chopped chives
- salt and pepper
In a bowl, whisk the eggs together with the milk.
Stir in the cheese, crumbled bacon and chopped chives, salt and pepper.
Spoon into a muffin pan that has been sprayed with non-stick baking spray.
Bake in a preheated 375 degree oven for 12 to 15 minutes or until cooked through.
Let cool slightly before removing from muffin pan.
Depending on the size of your muffin pan, this recipe will make 8 to 10 "muffins."
