Bacon Wrapped Cheese Jalapenos

Bacon Wrapped Cheese Jalapenos from Walking on Sunshine Recipes make for a delicious appetizer for your next party.


A few days before our daughter's wedding
 I sent her a text while she and her fiance were running errands and asked them to stop at the grocery store and bring home ONE jalapeno for me.  I was making homemade salsa and that was the one ingredient I forgot to purchase.  She brought home a whole bag...with 12 jalapenos.  

Way more than I needed for salsa.  She told me not to worry that I would use them. 
 Well, yesterday I used the remaining 11 jalapenos with this amazing recipe 
for Bacon Wrapped Cheese Jalapenos.  

Really anything wrapped in bacon is delicious and these jalapenos are delicious! 




Bacon Wrapped Cheese Jalapeno


Ingredients

  • 12 jalapeno peppers
  • 8 ounces cream cheese; room temperature
  • 1 cup shredded cheddar cheese
  • 1 clove garlic
  • 6 slices bacon cut in half
  • salt and pepper

Instructions

Cut the jalapeno peppers in half lengthwise. Remove the seeds and membrane. Set aside.
In a stand mixer or food processor, combine the cream cheese, cheddar cheese, garlic, salt and pepper until smooth.
Spoon the filling into pepper half.
Wrap each stuffed jalapeno with a half of slice of bacon. Secure with a toothpick through the center to make sure the bacon stays in place.
Place the jalapenos on a baking tray that has been sprayed with non-stick cooking spray.
Bake in a preheated 425 degree oven for 15 minutes or until the bacon is crispy and the cheese is melted. I turned the boiler on for a minutes or two to get the bacon extra crispy.

 You do NOT want to touch your eyes while handling jalapenos.
