Mini Cream Puffs

Today I'm sharing with you a recipe that would be perfect for New Year's celebrations.  We're hoping to drive into the city on New Year's Day.  The city being...New York City.  Both hubby and I are originally from Queens, and when we say "the city" we're talking Manhattan.  Visiting the city is something we've done a few times with the kids on New Year's Day. Hoping the weather and everything else cooperates.

But first I have these amazing mini cream puffs to share with you...

Making cream puffs is NOT hard!  My mother showed me how to make them years ago and then it took quite a few years before I made them again on my own, but I'm so happy I did.  My family loves cream puffs and I love making them...

Cream Puffs

Ingredients:
  • 1/2 cup butter
  • 1 cup water
  • 1/4 teaspoon salt
  • 1 cup flour
  • 4 large eggs

Directions:

Preheat the oven to 400 degrees.
Grease 2 large cookie sheets.
In a saucepan, heat the butter and water to a rolling boil until the butter melts.  Remove the saucepan from the heat.  With a wooden spoon, vigorously stir in the flour all at once until the mixture forms a ball and leaves the sides of the pan.
Transfer the mixture to a mixing bowl and add the eggs one at a time beating well after each addition until the batter is smooth and satiny.
Spoon the batter by rounded teaspoons onto the cookie sheets.
With a moistened finger, gently smooth the tops of the puffs.
Bake for 35 minutes or until they are golden brown.
Transfer to wire racks to cool.

The mixture has formed a ball and is pulling away from the sides of the pan...

All the eggs are incorporated...

Cooling on a rack...

Cut open and fill with pudding...

Drizzle with melted chocolate or add fresh whipped cream...

Delicious and they make the perfect treat for a special celebration...
