Chili Baked Potatoes

A delicious way to use leftover chili is with these chili baked potatoes from Walking on Sunshine Recipes.

What do you do with leftovers?
Last week I shared Crock Pot Chili with you and it was such a delicious recipe. But it did make quite a bit for just three people.  I  thought maybe we could have the leftovers in a different way instead of just reheating the chili.  So the other night we had Chili Baked Potatoes and they were really good!

Chili Baked Potatoes

Ingredients:
  • Baked potatoes
  • Chili; reheated
  • Sour Cream
  • Cheddar Cheese
Directions:

Slice the potatoes in half and top each half with the reheated chili, sour cream and cheddar cheese.

Enjoy!
The perfect way to eat leftovers is to create a new meal with them!

  1. Oh My Goodness. You've got me salivating now. This is my favorite meal of all. I could eat chili potatotes every day for dinner. Sometimes I cook my kids something "gross" like Macaroni and Cheese so mom can have a 'real" dinner of Chili potatoes. I'm so bad. But I LOVE potatoes and i LOVE chili, so put the two together and you have the perfect dinner! Thanks...now I know what we are having for dinner tonight.
