I shared this recipe last summer as part of a July 4th roundup, so I think the recipe became lost with all the other menu ideas. It deserves to have a post all on its own!
Corn Fiesta Salad
- Two ears of fresh corn; removed from the cob
- One can red kidney beans or black beans; rinsed and drained
- One can diced tomatoes; drained
- One cucumber; chopped
- 1/3 cup red onion; chopped
- 1 TBS. chopped parsley
- 1 TBS. chopped basil
- Italian Salad Dressing
Feel free to add chick peas or black eyed peas, whatever you have on hand works perfect for this salad.
That's the beauty of this recipe, there is no right or wrong!
Combine everything together in a bowl and add the salad dressing.
I used Good Seasons Italian Dressing, but your favorite would work nicely also.
Cover and refrigerator for one hour before serving.
