I have a fantastic soup recipe to share with you today! This is one of my daughter's favorite soups to order out at a restaurant and I finally found a recipe that we all loved.  I made this recipe for Chicken Tortilla Soup the day before she left to go back to Florida about two months ago.  Yes, it has taken me this long to get it on the blog.  

The recipe calls for shredded chicken, so make sure you check out how I cook my chicken to use in shredded chicken recipes.  You can also use leftover chicken from a roast or even purchase a rotiserrie chicken from the local grocery store.





Chicken Tortilla Soup Recipe



Chicken Tortilla Soup is best served with crushed tortilla chips, sour cream and cheddar cheese on top from Walking on Sunshine Recipes.

Chicken Tortilla Soup

An easy and delicious recipe for Chicken Tortilla Soup that is perfect for dinner and even better for leftovers the next day!

INGREDIENTS:


  • 2 cooked chicken breasts, shredded
  • 1 can crushed tomatoes, 15 ounces
  • 1 can red enchilada sauce, 10 ounces
  • 1 can black beans drained and rinsed, 15 ounces
  • 1 can chopped green chili peppers, 4 ounces
  • 2 cloves garlic, minced
  • 1 small onion, chopped
  • 2 Tablespoons butter
  • 1 package frozen corn
  • 2 cans chicken broth
  • 1 tsp. cumin
  • 1 tsp. chili powder
  • salt and pepper

INSTRUCTIONS:


  1. In a heavy saucepan, melt the butter.
  2. Add the chopped onion and cook until translucent.
  3. Add the minced garlic and cook for a few minutes.
  4. Add the crushed tomatoes, enchilada sauce, chicken broth, black beans, green chili peppers, seasonings and simmer on medium heat for about 40 minutes.
  5. Add the cooked shredded chicken and frozen corn.
  6. Continue to cook for another 10 minutes.
  7. Serve with a topping of sour cream, crushed tortilla chips and grated cheddar cheese.
