Chicken Tortilla Soup

An easy and delicious recipe fro Chicken Tortilla Soup from Walking on Sunshine Recipes.


I have a fantastic soup recipe to share with you today! 
 This is one of my daughter's favorite soups to order out at a restaurant and I finally found a recipe that we all loved.  I made this soup the day before she left to go back to Florida 
about two months ago.  Yes, it has taken me this long to get it on the blog. 
 My daughter is taking summer classes at the university she attends.


Chicken Tortilla Soup






Ingredients:


  • 2 cooked chicken breasts, shredded
  • 1 can crushed tomatoes, 15 ounces
  • 1 can red enchilada sauce, 10 ounces
  • 1 can black beans drained and rinsed, 15 ounces
  • 1 can chopped green chili peppers, 4 ounces
  • 2 cloves garlic, minced
  • 1 small onion, chopped
  • 2 Tablespoons butter
  • 1 package frozen corn
  • 2 cans chicken broth
  • 1 tsp. cumin
  • 1 tsp. chili powder
  • salt and pepper


Directions:

In a heavy saucepan, melt the butter.
Add the chopped onion and cook until translucent.
Add the minced garlic and cook for a few minutes.
Add the crushed tomatoes, enchilada sauce, chicken broth, black beans, green chili peppers, seasonings and simmer on medium heat for about 40 minutes.
Add the cooked shredded chicken and frozen corn.
Continue to cook for another 10 minutes.



To serve the soup, top with crushed tortilla chips, shredded cheddar cheese and sour cream...


This was such an easy recipe to put together. 
 I'm sure your family will enjoy it as much as we did!
