For this recipe, I used Hungry Jack buttermilk pancake mix to make the pancakes, but you can swap that brand for your favorite pancake mix. You could use my homemade bulk pancake mix recipe.

Substitutions and Variations
- Pancake Mix – Any brand of complete pancake mix will work. You can also use a “just add water” mix and adjust with milk if you prefer.
- Pumpkin Purée – Do not substitute with pumpkin pie filling or fresh pumpkin for this recipe. Fresh pumpkin is too watery and will give you a watery consistency. Pumpkin Pie Filling has added spices and sugar that we don't need for this recipe.
- Vegetable Oil – Substitute with melted butter for richness, canola or coconut oil for a similar texture, or applesauce for a lighter option.
- Extras – Fold in chocolate chips or chopped pecans for texture, or top with whipped cream and caramel drizzle for a dessert-style pancake stack.

Step 1: Start by adding the pancake mix, cinnamon, and pumpkin pie spice to a large bowl. Whisk the dry ingredients together to combine the mix with the seasoning.
Step 2: Add the milk, oil, and pumpkin purée to the dry ingredients and whisk just until combined. The batter should be slightly lumpy. Let it rest for at least 5 minutes.
Step 3: While the batter rests, heat a griddle over medium-high until hot, then reduce to medium and grease with cooking spray or butter. Pour ¼ cup batter for medium pancakes or ⅓ cup for larger ones. Cook until bubbles form on top, then flip and cook the other side until golden.

✔️ DO mix the batter gently as over-mixing can make the pancakes dense instead of fluffy.
❌ DO NOT use pumpkin pie filling, as it’s already sweetened and spiced and will change the taste and texture.
Storage & Serving Tips
Refrigerate: Store leftover pancakes in an airtight container in the refrigerator for up to 3–4 days.
Freezer: Freeze in a single layer on a baking sheet, then transfer to a freezer-safe bag. Store up to 2 months.
Thaw and Reheat: Warm frozen pancakes in the microwave for 1–2 minutes or bake in a 350°F oven for about 10 minutes. No need to thaw first.
Serving Tips: Serve with maple syrup, Whipped Cream, or a sprinkle of powdered sugar for a festive fall breakfast.

If your pancake mix is too watery, you can add more dry pancake mix to thicken it up. I find waiting a few minutes for the mix to thicken on its own works great. Another option is to add a little bit of flour or cornstarch to the mix to help absorb some of the excess liquid.
You can easily stir in chopped pecans, walnuts, raisins or even mini chocolate chips to the pancake mix and batter for added flavor.

Pumpkin Pancakes with Pancake Mix
Ingredients
- 1 ⅔ cup pancake mix I used Hungry Jack
- ½ teaspoon cinnamon
- 1 teaspoon pumpkin pie spice
- 2 cups milk
- ¼ cup oil
- ½ cup pumpkin puree
Method
- Preheat griddle over medium high heat. Prepare griddle by greasing with nonstick cooking spray.
- In a large bowl, whisk together the pancake mix, cinnamon, and pumpkin pie seasoning.
- Add the milk, oil, and pumpkin puree. Whisk until just combined.
- Let the batter rest for three to five minutes.
- Scoop batter onto hot griddle ¼ cup at a time. When batter begins to bubble, flip the pancake to cook the other side.
