So, I had some extra pizza dough...
NOT something you normally hear coming from my mouth, but
with the Colonel gone, using a whole recipe of pizza dough is too much for this family
and we do not enjoy reheated pizza.
The other night I only used half of our pizza dough for dinner.
The other half I placed in a container in the refrigerator with plans of making "something" soon.
Last night I made pasta for dinner and thought it would be great to homemade bread sticks to go
along with our pasta. I quickly put together these delicious garlic and Parmesan Cheese bread sticks using the leftover pizza dough. They were amazing!
Garlic and Parmesan Cheese Bread Sticks

Homemade Pizza Dough
- 1 (.25 ounce) package active dry yeast
- 1 cup water (110 degrees)
- 2 cups flour (or more)
- 2 tablespoons olive oil
- 1 teaspoon salt
- 2 teaspoons white sugar
Dissolve the yeast into the cup of warm water.
Let sit for about five minutes until the yeast begins to bubble.
In a mixing bowl with the dough hook attached, add the salt, sugar and olive oil.
Start adding your flour, 1 cup at a time.
When the dough begins to pull off the sides of the mixing bowl, you are ready to begin the kneading process.
You can either turn the dough out onto a floured board and knead by hand, or set your timer for five minutes and let the machine do the work.
Place the dough in a clean mixing bowl with a little bit of olive oil, cover with plastic wrap and set it aside to rise.
Once the dough has doubled in size, punch it down and turn out onto a floured board.
Shape the dough into the desired shape and place in a baking sheet that has been lined with parchment paper.
Let the dough rise for another 30 minutes before adding your toppings.
Note: The recipe calls for 2 cups of flour, but I always seem to need 3 cups. If after adding the 2 cups of flour, your dough looks like this, you will need to add more flour.
Forming the Bread Sticks...
Roll out the pizza dough.
Using a sharp knife or pizza cutter, cut the dough into strips.
Take a strip of dough and twist it into a bread stick shape...
Place the twisted bread sticks on a tray that is lined with parchment paper
and set aside for an hour to rise...
Just before baking, brush each bread stick with olive oil and sprinkle with garlic powder.
Bake in a hot 425 degree oven until golden brown; about 10 - 15 minutes.
Sprinkle with parmesan cheese before serving...
You do NOT want to sprinkle the Parmesan cheese on the bread sticks before baking.
The Parmesan cheese will "burn" and not taste good at all.
You can use store bought pizza dough or homemade pizza dough.
