Recipe: Chicken Cutlets Italian Style

Chicken Cutlets Italian Style is a recipe I grew up on.

Actually, I think every kid from Queens grew up on this recipe.  We actually had chicken cutlets Italian style at least once or twice a week and then again if my mom made chicken Parmesan.  

In fact whenever I make this recipe for chicken cutlets, I always try to make extra so we can have chicken Parmesan a few days later.  Both recipes seem to go hand in hand.

I'm sharing a recipe that was originally posted awhile ago on the blog. This recipe for Chicken Cutlets Italian Style is a family favorite recipe.  Add a side dish, a salad and you have an easy meal to serve to your family. My son, Michael, loves chicken this way and will usually request it when he is home from college.
The secret to great chicken cutlets Italian style is to start out with boneless chicken breasts and then make them thin. You need to slice the boneless chicken breast in half and then pound them to get them even thinner.  If I'm having a good day, I'll get maybe three slices out of one chicken breast.

Place one chicken cutlet at a time on your cutting board, I always put wax paper down first.  Cover the cutlet with another piece of wax paper and then pound GENTLY.

Dredge the chicken cutlets in egg and then in seasoned breadcrumbs. Some people dredge their chicken cutlets in flour as well, but I like only using breadcrumbs.

Brown the chicken cutlets on each side.


Brown both sides, but don't cook all the way through. We're going to finish cooking them in the oven.

Now, some people like to cook their chicken cutlets completely in the frying pan.  But I like to only brown them and then continue cooking them in the oven.  You'll get a much more tender chicken cutlet this way.  

Once the cutlets are browned on both sides, drain them on a paper towel and then place them in a baking dish.  Bake in a 375 degree oven until done, maybe another 10 to 12 minutes.

Makes a PERFECT meal that your family will love! You can prepare the chicken earlier in the day and then cook them in the oven right before dinner. And don't forget to make a few extra so you can have chicken Parmesan for a meal later in the week.

Breaded Chicken Cutlets - Italian Style

INGREDIENTS:

  • 4 boneless chicken breasts
  • 1 cup seasoned Italian breadcrumbs
  • 2 eggs; beaten
  • 1/4 cup vegetable oil

INSTRUCTIONS:

  1. Using a sharp knife, slice each chicken breast in half to get a thinner sliced chicken breast.
  2. Using a meat mallet, pound each piece of chicken between sheets of wax paper till 1/4" thick.
  3. Dip chicken in eggs, then dredge in breadcrumbs.
  4. Heat oil in large skillet over medium heat.
  5. Add chicken to the large skillet and brown each side approximately 2 minutes or until each side or until golden brown.
  6. Remove the chicken from the skillet and add to a baking dish that has been sprayed with non-stick cooking spray.
  7. Bake in a preheated 375 degree oven for 10 to 12 minutes or until the chicken is cooked through.
Note:
  1. Chicken is completely cooked with the internal temperature reaches 165 degrees.
