Homemade Manicotti...

Pasta Week continues with another family favorite,

Homemade Manicotti...

Made NOT with homemade pasta, but with homemade crepes...

Ingredients for the Crepes:

4 eggs

1 cup water
1 cup flour

Combine the above together in a blender until well combined...

Heat a small pan and spray with cooking spray.
Using a 1/3 measuring cup, pour some batter into the pan and immediately
begin to spread the batter around...

Yes, pick up the pan and let the batter evenly coat the bottom of the pan...

After a minute, flip your crepe...

Transfer the crepes to a dish and start stacking.
Make sure you put a piece of wax paper in between each crepe...

Combine a container of ricotta cheese with one egg...

Spread a nice layer of the ricotta mixture down the center of one crepe...

Gently fold over...

Place them seam side down in a baking dish that has a
layer of tomato sauce on the bottom...

Cover with more tomato sauce...

Spread some mozzarella cheese on top...

Bake at 350 until bubbly and hot...

Looking good...

Spread some more tomato sauce and a sprinkling of Parmesan cheese on top to serve...

Help yourself, please...

Come back on Saturday for two more family pasta favorites!

Tomorrow is Foodie Friends Friday...

Enjoy your day!

Oh I had no idea that manicotti was a crepe. Hmmm...this is within the realm of possibility. It looks wonderful.
