A Great Deal from Kohl's Department Stores...

I am re-posting this delicious recipe because
 I was recently contacted by
Kohl's Department Stores about a 
GREAT deal they are offering fans of
Walking on Sunshine.

Last week I remembered that I had $60 worth of Kohl's Cash to spend.

I headed out to Kohl's the next morning and proceeded to walk around
for TWO HOURS before I could find something to spend my "cash" on
and finally decided on A new crock pot.
Our old one has been doing its job for over 20 years and
I thought it was time to let "him" go rest on a shelf in the garage.

Yesterday, I made my first meal in the new crock pot,

Chicken Cacciatore...Skinny Taste Style

If you have never been to Skinny Taste, you need to head over NOW.
She has amazing recipes that are very Weight Watchers friendly.

(I changed it just a little bit with what I had on hand.)

Need to share with you my new crock pot...


2 to 4 chicken breasts
1 bag of frozen peppers and onions
1- 28 ounce can of crushed tomatoes
1 tsp. oregano and 1 bay leaf
salt and pepper 

Skinny Taste recommends browning the chicken and the vegetables
before adding them to the crock pot.
I completely forgot to do that and everything still tasted really good!

AND I used a bag of frozen peppers and onions 
AND chicken breasts because that's what I had on hand.

Add the chicken to the crock pot and then the vegetables, salt and pepper, 
oregano and bay leaf, pour the can of crushed tomatoes on top. 

Cook on low for 6 to 8 hours.
And then remove the lid and continue cooking until the sauce thickens;
about another hour.

Since this was a new crock pot, I was surprised at how quickly 
the chicken was almost ready in 4 hours.
And then I left the lid off and continued cooking for one more hour
for the sauce to thicken, removing the bay leaf before serving...

Serve over cooked pasta or egg noodles.
Sprinkle with Parmesan cheese...

Serve with a side tossed salad and GARLIC KNOTS,
and you have a DELICIOUS meal...

Now, don't you want to make THIS for dinner tonight...

Just so you know, I didn't add the oregano.  NOT a fan.  
I know, very strange for an Italian to dislike oregano.  
Oh well.

  1. I'm so glad that you mentioned how quickly your meal was ready in that crockpot. I own the same brand and everything cooks much faster than the recipe says. Question: How many crockpots do you own? I recently read where every well stocked kitchen needs several so that an entire meal from main course to dessert could be prepared in them. Thanks for the links and the yummy looking recipe and, yes, I do find it odd that you don't enjoy oregano. ☺

  6. Looks delicious, Lois, and I can't believe you don't like oregano! I have the same brand crockpot but mine is black. I have to confess that I haven't used it yet, but use a smaller one. I'm glad I read what Vee said about it cooking faster, so I'll keep that in mind when I do try it out.
