Chicken and Dumplings...

Good Morning!  It's been a COLD few days here in our part of the world!
The perfect weather for comfort food.

Chicken and Dumplings...



Growing up in Queens, NY, our "dumplings" were biscuits, not
 the traditional "noodle" that you find down south.
You can use any biscuit recipe, I usually use Bisquick, but
I've even seen other recipes that use canned biscuits.

This is also the same recipe I use for my chicken pot pie, but today, it's all about the dumplings.

Ingredients:

1/3 cup butter
1/3 cup flour
1 1/2 cups chicken broth
2/3 cup milk (I use half and half)
2 to 3 cups shredded cooked chicken
2 cups mixed vegetables
chicken bouillon cube, salt and pepper

Melt the butter and then add the flour...


Stir the flour and butter together and continue
cooking until they are completely combined.
Congratulations, you just made a ROUX...


Stir in the half/half and the chicken broth...


Continue cooking until you have a nice, thick, delicious cream sauce...


Now, season your cream sauce.
Add a cube of chicken bouillon and salt and pepper...


Now, add your vegetables and then your cooked chicken, which
I pre-cooked in my crock pot earlier in the day.

Your filling is done!
Taste it.  It is truly the most delicious filling ever...


Now prepare your "dumplings."

Combine together:

2 cups Bisquick baking mix
2/3 cups milk

I make half the recipe...


Drop by spoonfuls into your chicken and vegetable mixture...


COVER and continue to cook over a medium heat for about 5 to 8 minutes
or until the biscuits have set.

Serve and ENJOY...

  1. My mom always made dumplings from scratch. She would roll the dough out on her metal kitchen table, let it dry,then cut them and carefully drop them in her pot of simmering broth. I have never been brave enough to try it! But I have discovered frozen dumplings and, honestly, I believe they are just as good and a whole lot less trouble!!

  3. My kind of comfort food, Lois, this looks so yummy! Down here we call this chicken and pastry, as our dough is rolled paper thin, and we don't add vegetables. My Mother-in-law made the best, and to this day have not found any to compare. I like the fact that you can use the same recipe for chicken-pot-pie, thanks so much for sharing, stay warm!

  5. I use Bisquick too but mine never turn out as good as my mother in laws. It's still a work in progress for me. I drop mine in broth instead of a thick creamy mixture and they always come out either too done or sometimes even cook away to nothing.

    boy that sure looks good......
    I love me some chicken and dumpling,
    and I am a bisquick dumpling girl myself, they make the best dumplings around. I am making some beef stew
    today myself. Love eating all these soups and stews in the cold weather,
    that is why it is sad we haven't had that much cold weather, so gotta strike while the iron is hot, and get it made today!! lol

    Hope you are doing well, and so glad your had no problems with your root canal and you aren't in pain anymore, will be praying the other part goes just as well. also thanks for your sweet comments. I love my new artichoke too, have seen them for years but they were so expensive, found it at Marshall's for $7.99, so decided it was time...............lol
