Tuesday's Question...

This week's Tuesday's Question is an EASY ONE
as I've been away from my blog for awhile...

"What has everyone been up to?"

Life was DIFFICULT last week with the loss of our dear friend Arlene,
and at the same time, life was WONDERFUL with the celebration
of my mom's 80th birthday with a party here at our house.

Saturday was a sad and wonderful day.

We said good bye to Arlene and then we celebrated my mom's 80th birthday;
something I know Arlene was looking forward to attending but I know
in my heart she wanted us to have the party and
celebrate my mom's life.
Friends came that we haven't seen in years.
The food, in my opinion, was delicious.
We laughed and shared stories from long ago.

But more importantly we enjoyed each other's company.

Adele told me a beautiful testimony.  
After hearing my dad preach a sermon on tithing
 she wrote her first tithe check for $16 and the Lord HAS indeed blessed her
and she continues to tithe...

The Colonel, myself, my mom, my sister-in-law Beth,
my brother Bill, my sister, Liz and her hubby David...

My sister brought the chicken from a catering restaurant...

A Sudden Loss...

If you're friends with me on Facebook, then you'll know that on 
Monday our family experienced a sudden, tragic loss.

A dear friend, one of my mother's closest friends,
died suddenly in a terrible car accident.

One moment she was driving home from a visit to her sister's house
and the next minute she was gone.

Just like that.

In a twinkling of an eye she was gone.

My mom and Arlene after our church choir's Christmas production
this past December...

Arlene was part of almost everything in church.
She was kind to everyone and everyone is feeling her loss.

My mom and Arlene grew very close over the past 3 years.
Three years of phone calls.
Three years of domino games.
The list goes on.

And I'm feeling her loss as well. 
Arlene didn't look at me as "Loida's daughter."
She looked at me as her friend also.

She loved my blog; often leaving encouraging comments and
she always commented on my Walking on Sunshine Facebook page.

AND she played Words With Friends with me on Facebook.

A few weeks ago, she sent me an email telling me she wanted 
to start a game with me but wanted me to know she wasn't that good at the game.

I told her I wasn't either and that I really enjoyed playing for fun. 
And so our games began.
Only we never finished our last game.
She's gone.

I looked up our game the other night and realized that 
the last word she sent to me was "LOVE."

How amazing is that?

This Saturday is a special day.
We're celebrating my mom's 80th birthday with a party.

Oh we're still having the party,
but first we'll go to a funeral to say goodbye to Arlene.

But not goodbye for long.
For one day we'll all be changed in a "twinkling of an eye" 
just as it says in 1 Thessalonians 4:17:

Then we which are alive and remain shall be caught up 
together with them in the clouds, to meet the Lord in the air: 
and so shall we ever be with the Lord.

And what a day that will be.
I'm looking forward to that day, how about you?

Chicken with Ramen Noodles...

In yesterday's Tuesday's Question post I asked YOU what was the last recipe
you actually made that you found on line.

I enjoyed reading all the comments!  Thank you!

Today I'm sharing with you a recipe I recently made that I found on
Pinterest from THIS website.

It was so good and so easy!

Easy Chicken Lo Mein...


1 tablespoon oil-sesame or peanut oil

1 lb boneless skinless chicken breast, cut into thin slices
1 clove garlic, minced
2 tablespoons soy sauce or teriyaki sauce
2 teaspoons freshly grated ginger or 1 teaspoon powder
1 3-ounce package chicken flavor ramen noodle soup
1 1-lb bag frozen mixed oriental vegetables
1/4 cup water

Let's Begin...

Boil the noodles ONLY from the Ramen noodle soup and set aside.
Do NOT add the seasoning packet...

In a frying pan, saute the chicken in the oil...

These are the vegetables I used.
I also added some cut up zucchini...

Once the chicken is no longer pink, add the bag of vegetables.
Cover and continue to cook until the vegetables are cooked through...

Now take the PACKET from the Ramen Noodle Soup Mix
and combine it with the soy sauce, garlic, ginger and water.
Mix well and pour over chicken and vegetables...

Add the cooked noodles...

Cook a few more minutes until everything is combined...

Now, wasn't that EASY...

I think the only thing missing is an EGG ROLL...

NOTE:  You don't have to use Ramen Noodles.
You can add a regular chicken bouillon cube to the soy sauce STEP.

AND use spaghetti!

I've done this recipe both ways.


Tuesday's Question...

Life is really busy for me these days as I'm sure for most of YOU!

But we still need to cook dinner for our families and sometimes
cooking the same meals over and over again can be so 

I am forever searching Pinterest and Blogs looking for 
yummy recipes that I can make for my family.

Which leads to this week's Tuesday's Question...

"When was the last time you actually made a recipe 
you found on line and what is the name of that recipe?"  

And here is what I made last week...

Easy Egg Rolls...

Before I went MIA last week I promised to show you 
what I made in my new deep fryer that I purchased from 
the garage sale site that I belong to on Facebook.

Egg Rolls...

I used the same recipe for the Pork Won Tons post a few months ago.
So easy and so delicious! 


Coleslaw Mix (I used about 1 cup)
Leftover Pork (I used about 3/4 cup)
Teriyaki Sauce or Soy Sauce
Egg Roll Wrappers

Begin by combining the above ingredients (except the Egg Roll Wrappers)
in a few tablespoons of butter in a frying pan 
and cook until everything is nicely blended and the cole slaw mix is wilted.

Take one Egg Roll wrapper and place on a cutting board.
Place some of your pork/coleslaw mixture in the middle of the wrapper.
It helps to have the wrapper on a diagonal.

VERY IMPORTANT, using your finger, spread a little water all 
around the edges of the Egg Roll wrapper.  
This is your glue to hold everything together...

Begin by folding up the wrapper one time...

Now fold in the sides...

And continue folding up...

Until you have a nice little Egg Roll...

A few Egg Rolls ready to go...

Get your oil nice and hot and carefully place the Egg Rolls in the deep fryer, 
or use a regular frying pan...

Cook until a beautiful golden brown.
Remove and drain on paper towels...


And really EASY
