Recipe: Spinach, Cheese and BACON Quiche


This is a no-fail recipe for Spinach, Cheese and Bacon Quiche that you are gong to love!  You can make this recipe as a regular sized quiche or as mini quiche for appetizers from Walking on Sunshine.

Do you love quiche? 

I do.  I mean, I really do.  I've been making this recipe for Spinach, Cheese and Bacon Quiche for almost as long as I've been married.  I found this recipe in a cook book my husband gave me for our very first Christmas together.  

It's never failed to come out amazing.  Everyone I've made it for loves it too.  I've made it as a full size quiche and also as mini quiche to use for appetizers or buffets.  

Spinach, Cheese and Bacon Quiche



Add the two cups of cheddar cheese and then add the bacon.


Roll out your pie crust. You can use store-bought pie crust or you can make your own.

The last time I made chicken pot pie, I had extra pie crust
that I wrapped in plastic wrap and then placed in a freezer bag and then froze.
I removed the pie crust from the freezer earlier in the day and rolled it out.


I used a quiche dish but you can use a pie plate as well.
Pour your quiche mixture into your UNBAKED pie shell.



Bake at 425 for 15 minutes, then at 325 for another 35 minutes 
or until a knife inserted into the middle of the quiche comes out clean.


Perfect!  Add a side salad and dinner is ready!

Quiche

INGREDIENTS:

  • 4 eggs
  • 2 cups heavy whipping cream
  • 10 slices of bacon, already cooked and crumbled
  • One half package of frozen chopped spinach, thawed and completely squeezed dry.
  • 2 cups of cheddar cheese; shredded
  • 1 recipe for double pie crust dough

INSTRUCTIONS:

  1. Mix the eggs and the whipping cream together.
  2. Add the spinach, crumbled bacon and cheese. Stir to combine.
  3. Roll out the pie crust dough and using a biscuit cutter, cut circle shapes. Fit the circle dough shapes into the bottom of a mini muffin pan that has been sprayed with non-stick cooking spray.
  4. Using a small scoop, fill the muffin pan with the quiche mixture.
  5. Bake in a preheated 415 degree oven for 10 to 12 minutes or until a knife placed in the center of the quiche comes out clean.
  6. Let cool slightly before running a sharp knife around each quiche and remove to a baking rack to cool.
Note:
  1. This recipe will make 48 mini quiche or one regular sized quiche baked in a pie plate. If you choose to bake only ONE quiche, you will need only ONE pie crust dough. You can also freeze the mini quiche for up to 3 months.

    Oh, I love love love quiche as well.
    I usually make brocoli/cheese, but have made spinach before, but without the bacon, think I would like it much better with the bacon, so am just gonna have to make some soon cause yours looks so wonderful.
    Will have to go back and check out your post and see if you posted one on one of your dads sermons, how neat is that.................
