Spinach, Cheese and Bacon Quiche is one of the easiest and most delicious recipes to make. I love to serve quiche when I'm having friends over for brunch or an early lunch. It's even great to serve for dinner when you come home from work exhausted. Add a tossed salad and your meal is complete!
Spinach, Cheese and Bacon Quiche
Today I'm sharing with you a recipe I've been making for almost as long as I've been married. I found this recipe in a cook book my husband gave me for Valentines Day back in 1992!
This recipe has never failed to come out tasting delicious. Everyone I make it and serve it to loves this spinach, cheese and bacon quiche as well. For our daughter’s bridal shower, I made 15 full size quiche recipes! That was a ton of baking, but they were so delicious!
You can easily swap out the bacon for ham or leave the meat out entirely. Another yummy swap out is using frozen chopped broccoli instead of the frozen chopped spinach. The ideas or endless when you start making these. I've even adapted this recipe to make mini quiche to use for appetizers for holidays or parties.
HOMEMADE OR REFRIGERATED PIE CRUST
You can use homemade pie crust dough. I also use the same pie crust recipe to make Homemade Chicken Pot Pie. But I find store purchased pie crust dough works even better. You really cannot tell the difference for this recipe and refrigerated pie crust makes this recipe so easy.
How to Make Spinach, Cheese and Bacon Quiche
- 4 eggs
- 2 cups heavy whipping cream
- 10 slices of bacon already cooked and crumbled
- One half package of 10 ounce size frozen chopped spinach thawed and completely squeezed dry.
- 2 cups of cheddar cheese; shredded
- 1 recipe for double pie crust dough
Mix the eggs and the whipping cream together.
Add the spinach, crumbled bacon and cheese. Stir to combine.
Add the two cups of cheddar cheese and then add the bacon.
Roll out the pie crust dough and press it into the bottom of a 9" pie plate or if you have a pretty quiche dish, use it!
Pour the quiche mixture into the pie plate.
Bake at 375 degrees for 35 to 40 minutes or until a knife inserted into the middle of the quiche comes out clean.
Add a side salad and dinner is ready!

Instructions
- Mix the eggs and the whipping cream together.
- Add the spinach, crumbled bacon and cheese. Stir to combine.
- Roll out the pie crust dough and press it into the bottom of a 9" pie plate.
- Pour the quiche mixture into the pie plate.
- Bake in a preheated 375 degree oven for 35 to 40 minutes or until a knife placed in the center of the quiche comes out clean.
- Let cool slightly before serving.

I usually make brocoli/cheese, but have made spinach before, but without the bacon, think I would like it much better with the bacon, so am just gonna have to make some soon cause yours looks so wonderful.
