Pasta Fagioli Soup...EASY!

One of the many things I love about Pinterest is that 
I can use it as a place to store or "pin"
the many wonderful recipes I find while reading other blogs.

I came across this recipe for 
Pasta Fagioli Soup from the Country Cook a few weeks ago.
It looked so easy and I love using my crock pot,
so I pinned the recipe to my recipe board.

Pasta Fagioli Soup...



Ingredients:
Please don't let the LONG LIST of ingredients scare you!
(Because long lists scare me!)

1 pound ground beef 
1 small onion, finely diced
2 carrots, finely diced
2 stalks celery, finely diced
1 can diced tomatoes, NOT drained
1 can dark red kidney beans, drained and rinsed
1 can cannellini beans (or white kidney beans), drained and rinsed
1 (26 oz.) container beef stock (I used CHICKEN STOCK)
1 jar (25 oz.) spaghetti sauce (YES, I used a jar sauce)
2 tsp. dried oregano (I didn't use)
2 teaspoons dried parsley (I didn't use)
1 teaspoon ground black pepper
3/4 cup uncooked ditalini pasta (or your favorite small pasta shape)
Salt, to taste 


Begin by rinsing your beans...


Brown the ground beef and drain...


Chop the carrots, celery and onion.
Pretend you see chopped onion in this picture...


Add all the ingredients except the beef and pasta to your crock pot.

That's right, just dump everything into your crock pot.

Then add the ground beef...


Set your crock pot on low for 6 to 8 hours
or high for 4 to 5 hours.

THEN add your pasta, stir and cook for another 30 minutes.

I cannot tell you how DELICIOUS this soup was!
The original recipe says that you may want to add more broth
if you like your soup "soupy." 

I didn't do this.  
Because it was PERFECT.

And even more perfect was that we had such a busy day
and we came home to the most delicious smell 
and couldn't wait to eat dinner!

Being that my Hubs is Italian, we make this soup quite often. I had never had it until I met him, but now.... love it!!

Hi Lois, This sounds wonderful and I actually have these ingred.'s on hand. It is because of your blog that I bought myself a slow cooker for Christmas this year!!! I love all your recipes. Through amazon, I got the Hamilton Beach slow cooker - it was $16 off the reg. price with free shipping!
About the slow cooker granola, many of the recipes I read, suggested leaving a wooden spoon handle between the lid to prevent burning. I did not have a problem with the granola burning, so I did not do this - just thought I better mention it to you.
