Homemade Chicken Pot Pie Recipe from Walking on Sunshine Recipes

Do you have a favorite comfort food recipe?
For my daughter, Olivia, it would be chicken pot pie.  I started making my own chicken pot pie when Olivia was a baby. I would make the "filling" and put it in a blender to make it safe for her to eat. SHE LOVED IT.  I continued making this recipe and she continued to love it so much that when asked what was the one thing she loved about me for a preschool Mother's Day program she said my chicken pot pie.  All the other kids were saying how nice or kind or pretty their mom is and my girl said "My mom makes the best chicken pot pie."  I still make this recipe and my girl still loves it.

Melt the butter and then add the flour.

Stir the flour and butter together and continue cooking until they are completely combined. Congratulations, you just made a ROUX.

Stir in the half/half and the chicken broth.

Continue cooking until you have a nice, thick, delicious cream sauce.

Season your cream sauce. Add a cube of chicken bouillon and salt and pepper.

Now, add your vegetables and shredded chicken and continue to cook until everything is combined and thickened.

I'm using my own pie crust, but please do not feel bad about using store-bought. Roll out your pie crust. This time, I made individual pies.

Add your filling and top crust. Crimp the edges to make them pretty. Don't forget to add slits in the top of the crust. Bake at 425 for 30 to 40 minutes or until the crust is golden brown.

Homemade Chicken Pot Pie

The best comfort food is this recipe for Homemade Chicken Pot Pie. My daughter's favorite meal.

INGREDIENTS:


  • 1/3 cup butter
  • 1/3 cup flour
  • 1 1/2 cups chicken broth
  • 2/3 cup milk (I use half and half)
  • 2 to 3 cups shredded cooked chicken
  • 2 cups mixed vegetables
  • Chicken bouillon cube, salt and pepper
  • 1 recipe for a double pie crust

INSTRUCTIONS:


  1. In a heavy sauce pan, melt the butter and then add the flour. Cook the flour in the butter until golden brown.
  2. Stir in the milk and the chicken broth. Continue cooking until you have a nice, thick, delicious cream sauce.
  3. Add a cube of chicken bouillon and salt and pepper; season to taste.
  4. Add the shredded chicken and frozen mixed vegetables and continue to cook until everything is combined and thickened.
  5. Roll out the pie dough and fit into a pie plate. Add the creamed chicken mixture and top with the second pie dough. Crimp the edges and cut slits in the top. Brush the top of the pie dough with a beaten egg mixed with a little water or milk.
  6. Bake at 365 degrees for 30 minutes or until the pie crust is golden brown.
