The Best Chicken Pot Pie...

I started making my own chicken pot pie when Olivia was a baby.
I would make the "filling" and put it in a blender to make it safe for her to eat.
SHE LOVED IT.

I continued making this recipe and she continued to love it so much 
that when asked what was the one thing she loved about me for a 
pre-school Mother's Day program she said,

"My mom makes the best chicken pot pie."


Best Chicken Pot Pie


Ingredients:

1/3 cup butter
1/3 cup flour
1 1/2 cups chicken broth
2/3 cup milk (I use half and half)
2 to 3 cups shredded cooked chicken
2 cups mixed vegetables
chicken bouillon cube, salt and pepper

Melt the butter and then add the flour...


Stir the flour and butter together and continue
cooking until they are completely combined.
Congratulations, you just made a ROUX...


Stir in the half/half and the chicken broth...


Continue cooking until you have a nice, thick, delicious cream sauce...


Now, season your cream sauce.
Add a cube of chicken bouillon and salt and pepper...


Now, add your vegetables...


This is leftover chicken from a roast we had earlier in the week.
If I didn't have leftover chicken, I would cook a chicken breast with bone
in the crock pot earlier in the morning to use for this dish.

Add your cooked chicken...


Your filling is done!
Taste it.  It is truly the most delicious filling ever...


I'm using my own pie crust, but please do not feel bad about using store-bought.
Roll out your pie crust...


This time, I made individual pies...


Add your filling and top crust.
Crimp the edges to make them pretty.
Don't forget to add slits in the top of the crust...


Ready for the oven.
Bake at 425 for 30 to 40 minutes or until the crust is golden brown.

And, YES, I really do wear that apron...

  8. Love, love, love chicken pot pie. I usually make a 9x13 pan of it once a month during the winter months...I think the leftovers are probably better than when it's fresh! ;)
