What's For Dinner Monday?

Monday, November 21, 2011

Well, Olivia is home!

And today we have a busy day planned.

She needs clothes and I am more than happy to spend
the day shopping with my GIRL.

But first I wanted to share with you a recipe that I plan on serving
 on Thanksgiving Day.

Acorn squash
Craisins or Cranberries
Brown Sugar

First, cut your acorn squash in half and remove the seeds.
Then cut each half in half.
You now have 4 sections of acorn squash...
Add a pat of butter and a tablespoon of brown sugar to each section.
Top with a sprinkle of cinnamon and nutmeg.
Microwave on high until the center of each squash is soft and tender...
In a small frying pan, melt some butter.
Yes, MORE butter... it's Thanksgiving
Then add the walnuts and Craisins or cranberries.
I love Craisins...
Then add this mixture to the top of your cooked acorn squash...
Now doesn't that SCREAM Thanksgiving to you?

Enjoy your day!

I'm linking this recipe to Foodie Friends Friday

  16. *Runs out to buy acorn squash and Craisins*

  17. How fun to have your daughter home!! That squash looks amazing!!

  18. How do you serve it when there are mots of people. Do you cut it up(kind of messes with the presentation) or is one quarter supposed to be one serving. Can't tell how big each piece is.

  19. Susan, not sure how to reach you to answer your question, but what I do is give each person one "quarter" of the squash. As you see the squash in the photo, is how I will serve one person. I hope this helps! Thanks for the visit!

  20. These look great. I love acorn squash. Thanks for sharing on Foodie Friends Friday.
