Easy Pie Crust...

Pie Crust.
Two words that can send shivers up any one's spine.
Even I have taken the easy way and have been using store-bought pie crust lately.
Nothing wrong at all!

However,
I decided a week ago that I needed to make my own pie crust
for the chicken pot pie I was preparing for dinner that night.

I haven't made my own pie crust in a few years.
AND...
it was horrible.

The Colonel said the chicken pot pie was yummy.
He was being kind.

The "chicken" part was yummy, BUT the pie crust was crumbly.

I was wishing I had used the store-bought pie crust
instead of going through all the work of making my own.

HOWEVER...
it made me more determined to conquer PIE CRUST.

I had done it before in the past.
I always made my own.
So what had happened?
Has it been that long that I lost my touch?

Silly.
I looked on line for an easy recipe and found a VIDEO of some guy
showing step by step how to make pie crust.

So I set my computer on my counter, gathered all my ingredients
and proceeded to make the most delicious, flaky pie crust
which then I filled with the most delicious chicken pot pie filling.

Here we go...

INGREDIENTS:
(This recipe makes ONE pie crust)
1 cup flour
1/4 tsp. salt
1/3 cup shortening or butter
Ice cold water, about 3 - 4 TBS.

Add the shortening to the flour and salt...

Using a pastry cutter work the shortening into the flour...


Until it looks like cornmeal...


Yes, ICE in the water.
Makes the water even colder and it's suppose to help keep everything YUMMY...


Begin with ONE TBS. and slowly incorporate the water into the
flour and shortening mixture.
See it beginning to clump?



Keep adding the water ONE TBS. at a time until it begins to form a ball.
It will form a ball!
If it doesn't, you need to add more water...

I was SO HAPPY at this moment...


Yes,  a nice ball of pie crust...


 Wrap the dough in plastic wrap and place in the refrigerator until you are ready to use.

This recipe is for ONE CRUST.

It rolled out so beautifully and EASY...


Making your own pie crust really is easy and something you should learn to do,
there is a HUGE difference in taste between homemade and store-bought pie crust.

  1. Awesome, Lois! I just conquered my fear of making pie this past weekend, following two awesome recipes from allrecipes.com for apple and pumpkin. They were scrumptious, but I'm not ready to tackle pie crust just yet. I'll keep your recipe in mind when I am ready for that point. :-)

  5. Not fair having to wait for the rest of the news. I have always used my mom's pie crust recipe, and it never failed--it had a little bit of vinegar in it. Later I found out that it was an old Betty Crocker recipe. It was good and easy. I was visiting my mom before she passed away, and I couldn't believe it--she was using store bought crust! She said at her age, she couldn't waste a minute.

  6. I love chicken pot pie! I always buy my pie crusts. I made 2 pumpkin pies using the pumpkin we grew in our garden. I just bought the pie crust but maybe I should make the crust and then it all would be from scratch:)

  10. Love chicken pot pie, hate to make it. It's all because ....gulp...I am crust challenged.
    Please, can't we just continue to use the store bought one's Lois? My ego cannot take another crust failure! :D

  12. I don't care for the store bought pie crusts at all and I have a favorite crust recipe I use all the time that makes 5. I too have found cold water is key...and don't overwork the dough or it will get too tough. I also have wrapped the balls in Saran Wrap and freeze them for future use. I have to say the crust you rolled out looks prettier than any I've ever done!! And I'm DYING for the rest of your recipe for chicken pot pie!!! (Did you use butter or Crisco? I'm considering trying butter but never have)
