Peanut Butter Cup Cookies...

Last weekend Michael's football team had a bake sale and I did some baking!

Peanut Butter Cups...
I've been making these for years.
They're so easy BECAUSE...
I've always used store-bought peanut butter cookie dough.
I know...hard to believe!

BUT...
This time when I went to purchase the dough,
I couldn't find any in the grocery store!

Not to panic.
I just pulled out my regular Peanut Butter Cookie recipe and started baking.

Ingredients:

1/2 cup butter
3/4 cup peanut butter
1/3 cup sugar
1/3 cup light brown sugar
1 egg
2 TBS. milk
1 tsp. vanilla
1 1/2 cups flour
1 tsp. baking soda
1/2 tsp. salt

Cream together the butter and peanut butter...
Add both sugars and mix well...
Add the egg, milk and vanilla...
And finally, add your dry ingredients...
I find that if you refrigerate the dough for awhile, it makes it easier
to roll into the balls needed for this recipe.

Roll out the dough into balls...
Place the balls into a mini muffin pan that you have SPRAYED...
Bake 8 to 10 minutes at 365.
Watch them.
You want them still soft enough so you can
add the MINI Reese's Peanut Butter Cup into
the center of each cookie...
Press...
Remove the cookies to cool...
I wrapped 6 cookies per bag for the bake sale...
And of course, gave the Colonel a plate to ENJOY!

Today, my Colonel and the cadets he teaches
are performing at the Veterans Day Ceremony
at the university where he runs the ROTC program.

On the menu at our house tonight...
Roasted Chicken
Mashed potatoes with bacon and cheese (Recipe coming!)
Steamed broccoli
Homemade bread sticks.  (Recipe coming!)

Yes we need to make time to remember the wonderful men and women like your hubs for what they have given to keep us all free.

I can't believe how much I have come to love visiting here to read of what yummy thing you are serving the colonel next! These cookies look WONDERFUL. I love a peanut butter and chocolate combo. This sounds easy enough, though I don't have a mini muffin pan...(still thinking about that donut pan too, haha)

Yummy yummy! That's a perfect combination! I like how you make them in the muffin pan!

I have a 3 ingredient (I think it is) peanut butter cookie recipe. I haven't made it in awhile. I was surprised at it being so good with so few ingredients.

Thank you to the Colonel for his service to our country and to you and your kids for your sacrifice of having him away serving at times! God bless ya'll real good!
