Hi Lois,I love to make my zucchini this way: I fry 1 large onion, add 6 or 8 thinly sliced small zucchini, and 5 large ripe tomatoes cut up. If you have fresh basil add 8-10 large leaves cut up, if not use dried sweet basil to taste. Add salt and pepper to taste. In the winter when the tomatoes are not very good I use a large can of whole tomatoes with the juice. This is yummy over pasta! Hugs

Ah, yes...it's zucchini time! I'll head on over to the recipes ASAP.Another good way to get rid of more than what you can use is to put some in a basket...put them on your neighbors porch and quietly sneak away before they know it's you....AGAIN! LOL

In moist bread with 2 cups of zucchini per 2 loaves, keep the water in it after grating, and lots of cinnamon. :)Loretta's recipe sounds delicious, too.

Morning Sunshine,So good to hear from you hon!!I am really not that crazy about Zucchini typically just as a veggie,but I do love zucchini bread and pancakes. Call me Crazy!! lolI know it must be so hard for Phil to be away anyway but, it's probably makes it harder when there are so many fun Fall activities and holidays that you typically enjoy together as a family.You are sweet not to go without him, I don't think I would either,cause it wouldn't be the same anyway.Too bad you couldn't send him some pumpkin pie, oh you know what, lil Debbie makes these lil pumpkin cakes, and they are delicious with coffee. We used to eat them all the time, but theydo have hydrogenated oils so we never get them now, but if he has no heart issues a few wouldn't hurt him.Nice your Mom got you a pumpkin, that was sweet. I didn't get anyreal ones this year. Last year I got some real small ones from walmart for 50 cents a piece, soif I see some like that again I might get a few. They were so cute.I have to say we did really enjoy the pumpkin pancakes....I usually make pumpkin french toast and that is delightful as well, but this had a whole can of pumpkin in it,the other about a 3rd of a can if that much. I LOVE zucchini...my family does NOT share my enthusiasm:( but I sure wish I had a grill and you can be sure I would be having some grilled zucchini! Sounds so yummy!
Hi Lois,Yes, I got the tray from Walmart a couple of wks. ago. I had the chargers from last year. Better Homes and Garden and come out with a nice line for Walmart and very affordable.Hope you are doing well.
zucchini bread is my favorite or fried and dipped in ranch dressing , it is goodin pasta sauce too yummo.
