I'm joining Just a Gal today and sharing with you my recipe for homemade manicotti. 
This is what we had on Easter Sunday.

4 eggs
1 cup water
1 cup flour

Combine above ingredients in blender and mix. Pour into large mixing bowl.

Pour a small amount, 1/3 cup, into a small frying pan. Spread evenly, cook 1 minute, flip crepe and cook another minute.
Layer crepes on plate with wax paper in between each crepe. You can make the crepes the day before.

Filling:Ricotta, egg, mozzarella, Parmesan...
Mix ricotta and egg together and spread some mixture evenly down the middle of a crepe.
Fold both sides toward the middle.

Place crepe "seam side down" in a baking dish that has some sauce on the bottom.

Cover with sauce, mozzarella, Parmesan (sorry no picture with mozzarella!)

Bake at 350 until bubbly and your kitchen smells like Little Italy! Enjoy!

  9. What a fantastic recipe Lois - I am sure they were fantastic! You make it look so easy, and it is so helpful having the pictures! I have lost count of the number of times I have read a recipe which has said to do something a particular way and what I really need is a picture to help me visualise what I am supposed to do!! We'll have to try these someday soon, maybe with some spinach in the ricotta!!! F x

  10. I am so glad you shared this recipe for Homemade Manicotti. I married into an Italian family, and his aunts actually made this for our wedding dinner. I would love to surprise my husband for our 27th wedding anniversary this July 4 and make it for him.   15. I am impressed. Making the crepes from scratch is a lot of work. The results look worth it, though.

  16. I make manicotti too - but I have never made it with homemade noodles(crepes) before. I will definitely be trying your recipe. It sounds delicious! My hubby and son will be thanking you - that is for sure! They love it when I find new recipes to try out. The way to their hearts is definitely through their tummies LOL!
